Low Calorie

This watermelon [pizza] pie is extremely easy to put together, is quite delicious and it also has the added benefit of being  low-calorie and gluten free. We really enjoy this recipe because you can get creative with toppings. In this recipe we opted for fresh berries and nuts but you can go an alternate route and opt for more savory toppings, such as feta cheese, basil and balsamic glaze! The options are endless so get creative and have fun with it! Round up the kiddies or your besties and dig into the most guilt free pie to have ever hit your lips!

INGREDIENTS

1 medium watermelon sliced
1.5 cups greek yogurt
2 cups washed blueberries
2 cups washed strawberries quartered
1/4 cup dried coconut
2 table spoons sliced almonds
2 table spoons walnuts

PREPARATION

Slice the watermelon horizontally so you have at least 2 disc like watermelon slices. Spread the greek yogurt atop the watermelon slices. Sprinkle fresh fruit such as blueberries and strawberries atop the greek yogurt smeared watermelon.
Top it all off with dried coconut and nuts and dig into a guiltless pie!
