The weather outside might be frightful, but this rustic chocolate cake is oh- so- delightful, and if you don’t have any place to go, make this cake, make this cake, make this cake! Ok, so now that you’ve heard my Christmas Carole Baking rendition let’s talk about this lovely, chocolaty beauty. This recipe is adapted from the Magnolia Journal and I can assure you it will surely become your chocolate cake staple for any occasion. Dress it up with a seasonal theme or go the simple route and dust with powdered sugar and if you find yourself thinking that your presentation is underwhelming d o n t  s w e a t  i t  because the taste will always deliver! That is, so long as you use the unsweetened high quality baking chocolate!

This recipe takes 30 mins to prep, 55 minutes to bake and a few seconds to devour! Below is what you’ll need to create a Rustic Holiday Chocolate Cake. Happy Baking!

INGREDIENTS

3/4 cup butter

3 eggs

unsweetened cocoa powder for dusting

2 cups all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

4 oz. high grade unsweetened chocolate chopped ( yields 2/3 cup)

1 cup granulated sugar

3/4 cup granulated sugar

1 1/2 tsp.  vanilla

1 1/4 cups water

powered sugar or decorative themes

PREPARATION

Preheat the oven to 325 degrees (F). Allow butter and eggs to stand at room temperature for 30 mins. As you wait for that time to lapse generously grease the bottom and sides of your cake pan. Dust the greased pan with cocoa powder and shake off any loose and excess powder into the sink.

In a medium bowl stir together flour, baking soda, and salt. Set aside.

In a small pot, melt the high grade unsweetened chopped chocolate, careful to stir every 30 seconds. Cool slightly.

In a large bowl beat butter for 30 second. Add both sugars, beat until combined. Add eggs, one at a time, beating well after each addition. Add the melted chocolate and vanilla, beat until combined. Alternately add flour mixture and the water to the chocolate mixture; beat on low after each addition just until combined. Pour into pan, spread evenly.

Bake for 55-60 minutes or until toothpick or knife comes out clean when inserted in the center.of the cake. Cool cake on wire rack for 15 minutes. Remove cake from pan and cool completely on the wire rack.  Decorate with a simple dusting of powder sugar or another festive theme. Recipe yields 12 servings.
